Shivkumar’s grandfather travelled from Chennai to Bangalore in 1985. That’s when he started the Bhajji stall in bustling Gandhi Bazaar. Shivkumar, the current owner of the stall, got involved in 1994, and represents the third generation running the business. However, nothing much has changed, including the deep focus on quality. From picking the freshest of vegetables that are almost identical in size for making bhajjis, to using fresh oil and staying clear of using soda or palm oil, Shivkumar ensures that whatever the stall serves is fresh and hygienic. He himself makes fresh besan for the bhajjis to get the taste and consistency right.
- The bhajjis are served chopped into fours, covered with finely grated carrots, chopped onions and coriander and drizzled generously with chat masala and lime juice.
- There is an innovative pineapple bhajji for the more adventurous foodies.
